SINGLE CASK, AGED RUM - SPANISH
Crafted by Andalusian distillers at Azucarera del Guadalfeo—Spain’s last traditional sugarcane refinery—this rare Spanish rum is a remarkable aged spirit, bearing the imprint of time, terroir, and craftsmanship.
Distilled in the south of Spain in 2006 and matured for approx. 15 years at origin in Ex Bourbon American oak casks in the temperate, Mediterranean climate of Barcelona, the rum has developed exceptional depth and finesse. The slow coastal ageing allows for a gentler interaction with the wood, resulting in a complex, well-integrated profile that balances vibrant spirit character with refined maturity.
In 2021, the rum was imported to the UK and refilled into ex Bourbon Whisky casks where they lay in bond in the UK.
Ageing a rum in ex-Madeira wine casks after an initial maturation in ex-bourbon barrels introduces an additional layer of complexity, especially with rich fruit, nuttiness, and acidity from the fortified wine influence.
Organoleptic Evaluation:
On the Nose: Intensely aromatic with a luxurious interplay between dried fruits and oak. Notes of sultanas, stewed plums, and dark cherry are underpinned by vanilla, molasses, and a trace of polished leather. A gentle oxidative note from the Madeira finish adds hints of walnut, date syrup, and spiced orange peel.
On the Palate: Rich, layered, and slightly tannic. The bourbon cask influence provides structure—caramel, toasted oak, and baking spice—while the Madeira finish introduces depth with flavors of fig jam, candied citrus, roasted almond, and a touch of red berry acidity. There’s a well-balanced sweetness, tempered by drying wood tannins and a touch of sea breeze minerality.
Finish: Long and elegant, with lingering notes of dried apricot, cocoa, and Madeira-soaked raisins. The finish evolves with time in the glass, revealing complex undertones of black tea, ginger, and honeyed oak.
