6 Yr Old - Dominican Republic Rum - French Brandy Cask

This 6-year-old Dominican Republic rum is a refined expression of the island’s smooth, Spanish-style distillation tradition. Crafted from fermented molasses and distilled in a modern column still, the spirit undergoes a continental maturation in American oak ex-bourbon barrels, which impart rich vanilla and toasted oak influences. Aged for 6 years in American Oak this rum has extracted excellent flavours from cask interaction and has deepened its character with time and still has plenty of longevity for further maturation in the same cask.  

This rum, now approaching 7 years old, is in a beautiful stage of transition — the brandy cask is starting to round off the profile with lift and finesse, promising even more complexity as it continues to mature. It's a versatile and elegant sipping rum in progress — already charming, with more to come.

This rum was distilled in 2012 and filled into Ex Bourbon First fill Casks and shipped to the UK for further maturation. Then refilled into Ex French Brandy casks in Jan 2024,  The casks currently lay in bond in the UK.

Organoleptic Evaluation:

On the Nose: Fresh yet layered. Opening with soft notes of vanilla, crème caramel, and toasted coconut from the American oak. The developing French brandy influence adds aromas of orchard blossom, dried apricot, and a hint of almond paste. There’s a background warmth of cinnamon and light toffee.

On the Palate: Silky and well-balanced. The tropical oak years contribute caramel, banana bread, and baking spice, while the cooler UK maturation has smoothed the edges and introduced mild oxidative depth — walnut, golden raisin, and leather. The brandy cask is just beginning to make its mark: stewed apples, honeyed grape, and floral lift gently rise on the mid-palate.

Finish: Medium-long, with a mellow fade of spiced fruit, soft oak, and a wisp of dried pear. There’s a light tannic grip and nutty elegance beginning to emerge from the French oak.
