SINGLE CASK, AGED RUM - DOMINICAN REPUBLIC
This 6-year-old Dominican Republic rum is a refined expression of the island’s smooth, Spanish-style distillation tradition. Crafted from fermented molasses and distilled in a modern column still, the spirit undergoes a continental maturation in American oak ex-bourbon barrels, which impart rich vanilla and toasted oak influences. Aged entirely in the UK, the rum benefits from the slow maturation and gentle integrations of the oak compounds extracted over longer periods of time at much slower rates than Origin Aged Rums.
This rum, now approaching 7 years old, is in a beautiful stage of transition — The First Fill cask is starting to round off the profile with lift and finesse, promising even more complexity as it continues to mature. It's a versatile and elegant sipping rum in progress — already charming, with more to come.
This rum was distilled in 2012 and filled into Ex Bourbon First fill Casks and shipped to the UK for further maturation. Then refilled into a First Fill cask in Jan 2024, The casks currently lay in bond in the UK.
Organoleptic Evaluation:
On the Nose: Light and inviting, with aromas of caramelized banana, vanilla bean, toffee, and a touch of nutmeg. Hints of honeycomb and dried coconut emerge as it opens up.
On the Palate: Smooth and well-rounded. Flavors of golden syrup, toasted oak, and soft baking spices are layered over notes of ripe tropical fruit and a subtle nuttiness. A creamy mouthfeel adds richness without overwhelming the palate.
Finish: Medium in length, gently warming, with lingering impressions of vanilla fudge, cinnamon, and a hint of dried apricot
