SINGLE CASK, AGED RUM - DOMINICAN REPUBLIC

This 12-year-old Dominican Republic rum is a refined expression of the island’s smooth, Spanish-style distillation tradition. Crafted from fermented molasses and distilled in a modern column still, the spirit undergoes a continental maturation in American oak ex-bourbon barrels, which impart rich vanilla and toasted oak influences. Aged for 12 years in American Oak this rum has extracted excellent flavours from cask interaction and has deepened its character, this Rum has been further developed through a secondary maturation process in an Ex French Brandy Cask. 

This rum was distilled in 2012 and shipped to the UK then filled into Ex Bourbon First fill Casks and stored for further maturation, then refilled into Ex French Brandy Cask in Jan 2023. The casks currently lay in bond in the UK.

Organoleptic Evaluation:

On the Nose: Rich and expressive. Notes of caramelized banana, vanilla bean, and toasted oak rise first, followed by subtler layers of stewed pear, candied orange, and almond pastry. The influence of French brandy casks brings a refined fruitiness and floral undertone — think white peach, dried apricot, and elderflower.

On the Palate: Mature, rounded, and deeply layered. The tropical-aged core delivers warm notes of molasses, baked pineapple, nutmeg, and dark sugar, while the continental years add polish: leather, walnut, and a hint of dry tobacco. The brandy cask is beginning to contribute elegant acidity, stone fruit, and a soft, vinous character that lifts the mid-palate.

Finish: Long and evolving. Lingering impressions of oak spice, apple compote, hazelnut, and a delicate touch of grape skin tannin. A faint floral honey note echoes at the end, leaving a balanced, gently warming trail.

Now in its 13th year, this rum is in a prime maturation phase — showcasing depth from its Dominican origins, refined structure from its time in the UK, and a blossoming elegance from its French brandy cask finish. A sophisticated sipper already, with even more integration and nuance to come if left to age further.
