SINGLE CASK, AGED RUM GUYANA

This 12 Year Old, Guyana Rum was produced at the world renowned Diamond Distillery based on the Demerara River where they produce many different styles of rums. This particular rum marque was produced on the Diamond 1 & 2 Continuous metal Coffee still, 2 stainless steel column stills.

This light and approachable rum presents as a typical Caribbean style rum. It was distilled in November 2012 and imported as a fresh distillate to the UK later in 2012 where it was filled into American oak barrels for further maturation. This is 100% continentally aged, specifically bonded and aged in the UK.

Guyanese rums are considered some of the best in the world, thanks to their unique and meticulous production processes which can generally use the same style of wash/fermentation with the stills and process that change, with a wide spectrum of differences between the stills. These are traditionally distilled rums with notable flavour profiles rooted in history and heritage.

Aged Guyana rums are renowned for their complex richness in flavour profile. This particular rum is of a very light nature with a low congener level which does lend itself well to the integration of the of the oak compounds through the maturation process. The rum has been matured slowly at low humidity and temperature and should provide longevity for further aging in the UK or re-casking into finishing casks for short term

Organoleptic Evaluation 

On The Nose: 

Rich and inviting with layers of molasses, dried fruits (fig, date, raisin), and a touch of burnt toffee. Hints of vanilla, oak spice, and subtle tropical fruits — think banana and grilled pineapple — develop with time in the glass. A gentle trace of leather and tobacco nods to its mature age.

On the Palate:

Full-bodied and smooth, showcasing classic Demerara depth. Dark sugar, ripe plum, and baking spices (clove, nutmeg, cinnamon) lead the charge, balanced by well-integrated oak tannins and a gentle peppery warmth. The 12 years in cask brings a roundness and complexity without overwhelming the natural fruitiness.

The Finish:

Long, warming, and elegant. Echoes of dark chocolate, dried orange peel, and a lingering molasses sweetness fade gently, leaving a satisfying oaky dryness on the tongue
